Almond Butter Chocolate Chip Baked Oatmeal Bars (V, DF, GF, PF)

A plant-based delicious breakfast. Almond butter chocolate chip oatmeal topped with browned coconut flakes and almonds.
I truly love being a “mommy.” I am trying to hold onto that word for as long as I can. My 5 year old sometimes calls me “mom” and I correct him because I want to be “Mommy!” I am blessed to be a stay at home mom, as I get to soak in all of my baby’s firsts and lasts. It is just so AMAZING (of course there are days when I want to pull my hair out). My children like to wake up bright and early (well it doesn’t even need to be bright out, they just like to be up between 6-7 EVERY morning). Being extremely exhausted, I need extra sleep, but hearing my son’s feet pitter patter across our tile floor in the morning is the best! He crawls into bed with us and we get to close our eyes for at least 5 minutes before our girls wake us. They are still in cribs, so we get to stumble into their room to get them (my husband, Justin, and I take turns). We are greeted with huge smiles and a, “good morning,” upon walking in. This blissful time of the morning only lasts about 10 minutes and then they become little monsters if they don’t have breakfast within 10 minutes of waking. After the adorable happy smiles and good mornings it goes something like this, “Mommy I am hungry!” “Daddy, what can we eat? I’m starving.” “Hold on angel baby, I’m trying to get your breakfast cooked” (as my two year is holding onto my leg crying.) These almond butter baked oatmeal bars are great for breakfast. They refrigerate well and warm up nicely, and are good for up to 7 days (but trust me, they won’t last that long). My kiddos love them because, well, they have chocolate chips and almond butter in them. If I gave my kids a bowl of almond butter and chocolate chips, they would be ecstatic. These bars are packed with protein, energizing carbs (they are a good pre-workout breakfast, I love having these bars before CrossFit) and good fat to keep you feeling full until mid-morning snack. These baked oatmeal bars are one of my favorite breakfast options. They don’t last long in our house at all. My husband not only enjoys them for breakfast, he often eats the leftovers for a dessert. I appreciate that he likes them so much, but come on, save them for our ‘starving’ early risers!

Almond Butter Chocolate Chip Baked Oatmeal Bars (Vegan, Dairy-Free, Gluten-Free, Peanut-Free)
A plant-based delicious breakfast. Almond butter chocolate chip oatmeal with browned coconut flakes and almonds on top. (Vegan, Dairy-Free, Peanut-Free and Gluten-Free).
- 1 ripe banana mashed (I prefer using a banana with brown spots)
- 2 tbsp ground flaxseed
- 2/3 cup almond butter
- 1 tsp vanilla extract
- 1/4 cup pure maple syrup
- 3 tbsp plant-based milk (I use almond milk or canned coconut milk)
- 1 tsp baking powder (aluminum free)
- 1/4 tsp salt
- 2 1/2 cups gluten-free rolled oats
- 1/2 cup vegan chocolate chips (set aside 2 tbsp to sprinkle on top)
- 1/4 cup unsweetened coconut flakes
- 1/4 cup chopped almonds
Preheat oven to 350° F. Coat an 8x8 pan with coconut oil, set aside.
In a large bowl, mash ripe banana. Add flaxseed and almond butter. Mix until combined.
Then add, vanilla extract, pure maple syrup, plant-based milk, salt and baking powder. Mix until combined thoroughly.
Stir in gluten-free rolled oats. Then fold in chocolate chips. Pour mixture into pan, spread evenly.
Top with coconut flakes, chocolate chips and chopped almonds.
Bake for 25 minutes.
