Almond Butter Chocolate Chip Energy Bites. Doesn’t that sound YUMMY? Of course, these bites have all of my favorite items in them. One morning, I had nothing prepared for breakfast and needed to make something quick. My kiddos were hungry and I knew the fruit I had given them would only tide them over for a little while. I looked in the pantry and the fridge, found some of my favorite items, and started putting ingredients into a bowl and created these tasty bites.
The original plan was to bake them, but my kiddos had a taste of the mixture, loved it and wanted to keep eating it right from the bowl (in my mind I thought energy bites!). One fantastic thing about baking Plant-based is that you can enjoy the batter without having to cook it! I decided to give the kiddos some of the mixture in a bowl for breakfast. I rolled the rest into balls, then threw them in the freezer for about 20 minutes.
These Almond Butter Chocolate Chip Energy Bites are a perfect snack! They are packed with oats. I love that oats are jam packed with fiber, vitamins, minerals and antioxidants, which have major health benefits for my family! Oats are also believed to protect against heart disease. They also contain almond butter, which is an ideal source of protein. Eating protein through almond butter is especially good before workouts because the protein in almonds take longer to digest and therefore provides a more steady source of energy during workouts.
Instead of sweetening these bites with refined sugar, I used pure maple syrup that contains some important antioxidants and minerals like zinc and manganese and may fight against inflammatory disease. These bites are a perfect grab and go snack, or are delish if devoured straight from the bowl.

Almond Butter Chocolate Chip Cookie Dough Bites
These delicious Almond Butter Chocolate Chip Energy Bites are a one-bowl recipe that is not only vegan and gluten free, they are also delicious. Packed with protein, vitamins and minerals they are the perfect snack to give you some extra energy throughout the day.
- 1 cup unsweetened almond butter
- 1/4 cup pure maple syrup
- 1 tsp tsp pure vanilla extract
- 1/2 tsp sea salt
- 1 cup gluten-free rolled oates*
- 1 cup gluten-free instant oats*
- 1/2 cup dairy-free chocolate chips
Line baking sheet or container with parchment paper. Set aside.
In a bowl, combine all wet ingredients and salt. Mix well.
Add gluten-free oats and dairy-free chocolate chips. Mix until thoroughly combined.
Spoon a heaping tablespoon into your hands and roll into bites (I coat my hands with coconut oil if mixture is too sticky). Place on parchment paper and freeze for 20 minutes until firm. Store in refrigerator.
*I use two different oats because my kiddos love the texture. You can use 2 cups of rolled oats or instant oats. You can also blend (pulse a few times) 1 cup of rolled oats to give it the same texture as using the instant oats. Each way turns out great!
