It is a BEAUTIFUL spring day in Arizona. My family and I just got finished eating some yummy Baked Oatmeal (Almond Butter Chocolate Chip Oatmeal Bars) after breakfast we planted some colorful spring flowers. The kids loved planting the flowers, but found it difficult not picking them. Try explaining that to two little girls that are just amazed with how pretty the flowers are. Of course, they think the flowers would look much better in their hands or in a vase in the house. While the girls want to pick the flowers, my son wants to sit in front of the flowers and draw them. It is the cutest thing! He is a little artist. Okay I just had to tell you about the start of our beautiful spring day! Now, let me tell you about some cookies I just made, and YES, they are tasty!

When coconut meets chocolate, it creates such a magnificent taste! I wanted to bake cookies that were gluten-free and contained coconut and chocolate. I found the perfect recipe I could adapt, from a well-known blogger with great food! Celebrating Sweets. I took this recipe, Chewy Coconut Almond Cookies (Gluten Free), from her blog, and created my own to make it plant-based. The results are delicious! I decided to call the cookies Vanishing Chocolate Chip Coconut Cookies (gluten free). I decided on this name because one evening my in laws were over visiting, and my father in-law enjoyed the cookie so much, he helped me come up with a clever name. These cookies did not last long.
My little girl has a gluten intolerance and quickly fell in love with these cookies. This is awesome because I now have another yummy cookie I can make for her to enjoy. These Vanishing Chocolate Chip Coconut Cookies are made with pure maple syrup, which makes them refined sugar free (another great aspect)! I am excited about these cookies because they have good quality ingredients.
Vanishing Chocolate Chip Coconut Cookies
These cookies are not only plant-based and gluten-free, they are refined sugar-free. Made with almond flour and loaded with coconut and chocolate chips. A perfect dessert that will not last long!
- 2 flax eggs 2 tbsp ground flaxseed and 6 tbsp of water
- 2 cups almond flour
- 1 tsp aluminum free baking powder
- 1/2 tsp salt
- 3/4 cup unsweetened shredded coconut
- 1/4 cup organic refined coconut oil melted but not hot
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup vegan chocolate chips
Mix flax eggs, set aside for at least 6 minutes.
In a bowl, whisk almond flour, unsweetened coconut, baking powder and salt, until blended well.
In a separate bowl, combine coconut oil, pure vanilla extract, pure maple syrup and flax eggs (after they have set for at least 6 minutes). Then add to dry ingredients and mix until just combined. Fold in vegan chocolate chips.
Cover and Chill in the fridge for at least 2 hours or even overnight.
Preheat oven to 375°F. Line a baking sheet with parchment paper.
Shape dough into 1-inch balls, place on baking sheet and press down slightly to flatten a bit.
Bake 10-12 minutes until the edges are slightly golden brown.
Place on cooling racks.
