Delicious Dairy-Free Chocolate Chip Cookies (V, DF)


A plant-based spin on a classic delicious chocolate chip cookie.  Golden brown edges with a perfectly gooey center.  Vegan, Dairy-Free, Peanut-Free.

Ingredients

  • 1/4 cup coconut oil (melted/I prefer organic and refined))
  • 1/2 cup vegan butter (I use Earths Balance)
  • 1 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisk well, set aside for at least 6 minutes)
  • 1 tbsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp baking powder (I prefer non-aluminum)
  • 1/4 tsp salt
  • 2 1/2 cups all purpose flour
  • 2 cups vegan chocolate chips

Instructions

  1. Whisk flax eggs and set aside for at least 6 minutes.

  2. Preheat oven to 375°F.  Line two baking sheets with parchment paper (I like to use my baking stone).

  3. In a bowl whisk together baking soda, baking powder, salt and flour. Set aside.

  4. In a separate medium sized bowl, combine melted coconut oil, vegan butter, brown sugar and granulated sugar. Blend until smooth.

  5. Add flax eggs and vanilla extract until blended completely (on medium speed).  Slowly add flour mixture until thoroughly blended.  Fold in chocolate chips with a spatula.

  6. Drop heaping tablespoons of dough onto baking sheet or baking stone.

  7. Bake for 13-15 minutes.  Using a spatula, carefully transfer cookies to a cooling rack.
