Avocado Quinoa Salad

A super tasting Avocado Quinoa salad is not only bursting with flavor it is loaded with lots of vitamins and minerals that is great fuel for your body.

Ingredients

  • 3 cups chilled cooked quinoa
  • 1 cup chopped red bell pepper
  • 1/2 cup red onion
  • 1 cup sweet corn I like to brown mine in a frying pan
  • 2 diced avocados
  • 1 finely chopped japeleno
  • 1 cup black beans

Dressing

  • 3 tbsp freshly squeezed lime juice
  • 3 tbsp freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 3 tbsp finely chopped cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt

Instructions

  1. In a large bowl, combine quinoa, bell pepper, sweet corn, avocados, jalapenos and black bean.  Mix well.  Set aside.

  2. In a small bowl combine lime juice, lemon juice, olive oil, cilantro, cumin, chili powder and salt.  Whisk until combined well.

  3. Pour dressing over quinoa mixture and stir well.  I prefer to chill the salad for at least 30 minutes (totally up to you!)
