I am very excited about this blog, as I want to share the passion I have for creating delicious recipes our friends and families can’t get enough of. You’ll find all my recipes are dairy free, peanut-free, as well as vegan, and for good reason in my house.
Shortly after my son Gavin was born in 2011, he was covered from head to toe with a rash, and it was getting worse with every passing week. Through countless doctor appointments, we found Gavin had a severe dairy allergy and he was being exposed to the allergen through my breast milk. The instant I discovered dairy was the potential culprit , I decided I would give up dairy to see if it would make any difference. I was a mom on a mission and was ready for a challenge. Gavin’s rash quickly started to heal and within a month, it was gone. Just as our friends and family were accustomed to our dietary exclusion, Gavin tried a small bite of a new dessert at a party and had a severe allergic reaction. Gavin was rushed to the ER we found that in addition to dairy, he was also highly allergic to peanuts. No more dairy or peanuts in this house!
In 2015, my husband discovered he had inherited high cholesterol. After being on medication for a year, we decided to find a natural way to reduce cholesterol and we heard going on a vegan (mostly plant-based) diet would help. My husband has eaten vegan since 2015, and his cholesterol levels are within the healthy range without medications. WOW!
Now, all our dietary restrictions may seem rather restricting, but cooking vegan and redesigning recipes to accommodate food allergies has not only broadened our palettes, but unveiled a whole world of delicious and healthy foods! I’ve never once felt like I’ve sacrificed on any of the delicious tastes from old family favorite dishes I grew up eating. I’ve actually found I crave healthy foods as a result!
