Almond Butter Chocolate Chip Baked Oatmeal Bars (V, DF, GF, PF)
These Almond Butter Chocolate Chip Baked Oatmeal Bars are a delicious plant-based breakfast. Almond butter chocolate chip oatmeal topped with browned coconut flakes and almonds.
I truly love being a “mommy.” I am trying to hold onto that word for as long as I can. My 5 year old sometimes calls me “mom” and I correct him because I want to be “Mommy!” I am blessed to be a stay at home mom, as I get to soak in all of my baby’s firsts and lasts. It is just so AMAZING (of course there are days when I want to pull my hair out). My children like to wake up bright and early (well it doesn’t even need to be bright out, they just like to be up between 6-7 EVERY morning). Being extremely exhausted, I need extra sleep, but hearing my son’s feet pitter patter across our tile floor in the morning is the best!
After my son crawls into bed with us and we get to close our eyes for at least 5 minutes before our girls wake us. They are still in cribs, so we get to stumble into their room to get them (my husband, Justin, and I take turns). We are greeted with huge smiles and a “good morning,” upon walking in. This blissful time of the morning only lasts about 10 minutes and then they become little monsters if they don’t have breakfast within 10 minutes of waking.
These Almond Butter Chocolate Chip Baked Oatmeal Bars are:
- Protein packed!
- Just the right amount of coconut
- Kid and husband approved
- Gluten, Dairy & Peanut Free
- Plant-based
- DELICIOUS!!!
After the adorable happy smiles and good mornings it goes something like this, “Mommy, I am hungry!” “Daddy, what can we eat? I’m starving.” “Hold on angel baby, I’m trying to get your breakfast cooked” (as my two year is holding onto my leg crying.) This is why I like to have breakfast prepared the day before, or get up before they do to prepare (sometimes, not a chance this happens!). In comes… Almond Butter Chocolate Chip Baked Oatmeal Bars.
These almond butter baked oatmeal bars are great for breakfast. They refrigerate well and warm up nicely, and are good for up to 7 days (but trust me, they won’t last that long). My kiddos love them because, well, they have chocolate chips and almond butter in them. If I gave my kids a bowl of almond butter and chocolate chips, they would be ecstatic.
These bars are packed with protein, energizing carbs (they are a good pre-workout breakfast, I love having these bars before CrossFit) and good fat to keep you feeling full until mid-morning snack. These baked oatmeal bars are one of my favorite breakfast options. They don’t last long in our house at all. My husband not only enjoys them for breakfast, he often eats the leftovers for a dessert. I appreciate that he likes them so much, but come on, save them for our ‘starving’ early risers!

This looks yummy 🙂
Thank you so much!
Maybe if you doubled the recipe like I did, there would be some left to take to the grandparents or leave one for the postal person? 😄
I have had these and they are delicious!!
Oh my goodness! These look so good! I love coconut and chocolate together.
Such a sweet story! It made me miss my now adult kids, although they wouldn’t snuggle with me today-haha! Those bars look so good. I’d totally look forward to waking up if they were waiting for me.
I told my kids they have to always snuggle with me and my 6 year old told me that once he got married he would have to stop. LOL
These look absolutely incredible. And they’re vegan!!! awesome.
OMG you’re killing me! I can’t even look at these pictures right now because I need to go to bed but seriously, I want to go make these, immediately. All my favorite things in one! 😀
That is how I feel when I’m on Pinterest at night!!!
Can you replace the flax seed?
Yes sub with Chia seeds. Let me know if you try it!
If you replace the flaxseed with the chia seed is there anything special you have to do first with them or do you just add them as is?
Hi. I apologize for the delayed response. Just add 3 tablespoons for every 1 tablespoon chia seeds (just like the flax egg). 🙂
3Tbls of water? I assume you mean. Is this correct?
I use almond milk or canned coconut milk. You are welcome to use water. It will turn out the same. 🙂
Can the maple syrup be omitted?
Yes. It just won’t be as sweet. 🙂
I need to try these. They look SO good! I love chocolate for breakfast. 🙂
Oh my gosh, I love this post! Not only does the recipe look and sound delicious, but it brings back memories of when my babies were…babies. Now they’re technically young adults!
Thank you! I am trying to embrace every moment (even the crazy out of mind ones! :)) with my kiddos, time flies!
Well this is the kind of breakfast I could be happy with. They look amazing!
Thank you so much!
I’ve been looking for a recipe for protein-packed oatmeal bars, and this one sounds like a winner.
Great!!! Hope you enjoy them!
Oh yum! I have started to cut back on sugar, carbs, and dairy myself ever since we got back from a long, boozy vacation. I really need a detox! This recipe comes at the perfect time and the bars look absolutely divine! Cheers, Kiki
Thank you! Hope you enjoy!
These look amazing. But, I’m allergic to bananas. Do you lnow any options for substitutions?
Thank you! Applesauce will work great! I would use 1/3 cup. 🙂
I’m allergic to bananas, is there a substitute?
Yes. You can use applesauce instead (I would probably sue 1/3 cup).
How long will these last out on the counter? Also have u tried freezing them?
Hi! I store them in the refrigerator after they have cooled (up to 7 days). I have not been able to freeze them. If you freeze them let me know how they do.
I’m just trying these now–in the oven as we speak. I’m taking them to a Seattle Seahawks game party. They look and smell amazing!
I hope you enjoyed them!
Do you have the Weight Watcher smart point count for these delicious looking bars?
Thank you,
Marilyn
Hi! I am sorry but I do not have the points for these bars. 🙂
I’m making these for the second time tonight. So good!!! I used sugar free maple syrup and chia seed instead of flax.
I made a batch tonight. These are so good I don’t see them lasting long, since they are so delicious. My teenager liked them, too.
I am so glad you enjoyed them!

Hi can I prepare this and refrigerate that batter until ready to bake it (In a couple of days) or will it become too soggy ? Thanks
Hi! I have prepared it and left it in the refrigerator overnight. I am not positive how it would turn out after a couple of days but I think it would be fine. Let me know if it works out for you. 🙂
These are yummy! But my question is why they not stay together. They cooled but fall apart.
I’m glad you like them! I am not sure why they fell apart. Mine are a little crumbling right out of the oven but once they have cooled they stay together. When I put the mixture into the baking dish I pack it down before adding the topping.
We made these today and they are very good. My son enjoyed them. Next time I may try pulsing the oats because they seemed to make the bars a bit dry. Also do you think it would work and make them less dry to add an egg? We aren’t vegan so eggs work for us. Thank you!
Hi! I am wondering why they are dry? Is your almond butter super thick? You can always add another banana or a little more milk. I have never made them with an egg but I am sure they will turn out great! If you make decide to make them with an egg let me know how they turn out.
These bars look so decadent and delicious! I love oatmeal in desserts!
Enjoy every second that your kids call you Mommy. Mine is 23 and I am called everything from Mom, to Mim, to Mama-cita to Mama to Lisa… Never Mommy. Maybe if she’d call me mommy, I’d make her your yummy bars… love the coconut! My favorite.
I definitely thought these were solely a dessert at first! Can’t wait to make them.
What a great family breakfast!
Health is wealth and these Oatmeal Bars are amazing and full of protein and richness. Love the ingredients used to make these amazing bars.
Wow, these look absolutely divine. They remind me of Magic Bars — only a much healthier version. I love anything dessert-y for breakfast. Love!
These bars contain ALL my favorite things into one dessert! I LOVE IT!
These vegan almond bars are amazing and I’m sure my daughter would be thrilled. They are protein-rich, fiber-rich and yet these are sweet treats. Yummy! Can’t wait to give them a try:)
These look so ooey gooey delicious! My grandkids are going to love these!
Thanks for sharing! Does it keep long?
Yes! I store it in airtight container, in the refrigerator, for up to a week.
SO good. Hard to eat just one! The toppings really add to it! Thanks!

Anita
I put the bars in a sealed container and store them in the refrigerator for up to 7 days.
Awesome recipe, such a satisfyint treat post-mountain bike training ride! Used homemade date syrup to induce a slower burn and extra thick organic, gluten-free rolled oats. Will definitely add to my ultra-endurance race food kit. Thanks so much, this awesome!
Thank you so much! Homemade date syrup sounds amazing, I am going to give it a try.
