Chocolate Chip Banana Bread Baked Oatmeal – Healthy and delicious grab and go breakfast
I LOVE oats! I’m not just talking about really liking oats, I’m talking about being head over heels in love with one of the best cooking ingredients there is! Oats are super versatile and I’m able to use it in SO many food dishes, from breakfast to dinner. I love I can use old fashioned rolled oats, quick oats, or a combination of the two to give various consistencies and textures to my dishes. I also make my own oat flour from blending the rolled oats in a food processor. Oats are jam packed with fiber, vitamins, minerals and antioxidants, which have major health benefits for my family! Oats are also believed to protect against heart disease. Woot Woot! Can it get any better than that!?
Heart disease (YUCK), runs in my husband’s family, so my husband is super proactive with what he eats so he doesn’t get heart disease or doesn’t get put back on medicine. I will make sure he doesn’t have to take pills if possible, we prefer the natural way to prevent disease. (He is SO lucky to have me to prepare such a great healthy breakfast)
I love to bake with oats and oat flour
One of my favorites (I do not say this lightly, because I have LOTS of favorite recipes that include oats or oat flour) is this banana bread baked oatmeal. It reminds me of my grandma’s banana bread, and we all know nothing seems to taste as good as something your grandma makes! But this one is made with gluten free rolled oats and instead of sugar, I use pure maple syrup. Oh, and of course I add chocolate chips. You will easily discover that I have this intense love for chocolate!
Make sure to use really ripe bananas, the ones with brown spots are my favorite! I like to prepare my baked oatmeal in muffin liners so they are easier for my kids to eat and are a great serving size. This baked oatmeal is super quick to prepare all in a SINGLE BOWL! Woot Woot!…Less dishes!! That sounds like a deal to me.
I use silicone liners which I think are pretty awesome. I remove the liners and they are reading for eating, putting in the refrigerator for up to a week or freezing! This recipe is very allergy friendly. Plant-based, gluten free and peanut free! Oh and remember you only need ONE BOWL to prepare them!

Chocolate Chip Banana Bread Baked Oatmeal
Healthy and delicious, banana bread baked oatmeal cups with chocolate chips. Made vegan, gluten-free and peanut-free.
Ingredients
- 3 very ripe bananas (mashed) medium-sized
- 3 tbsp plant-based milk I use almond milk
- 1/4 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking powder aluminum free
- 3 cups gluten free rolled oats
- 1/3 cup vegan chocolate chips
Instructions

Preheat oven to 350°. Line a muffin pan with liners.

In a large bowl, combine mashed bananas, plant-based milk, pure maple syrup and vanilla. Mix thoroughly.

Add salt and baking powder. Mix well. Stir in oats and chocolate chips, mix until combined.

Divide mixture evenly into muffin cups. Bake for 16-18 minutes
