Vegan Sugar Cookie Bars

I absolutely love sugar cookies (meaning I eat about a half dozen on Christmas Eve) and My love of Sugar Cookies will never fade. Especially the Christmas Sugar Cookie cutouts, they are just perfect for the Holiday Season and are my favorite treat! But other than the Holiday season I may not want to take the time to make cutouts, so I like to bake Vegan Sugar Cookie Bars because they are quick and easy to make, especially when I do not have the time to individually frost and decorate each cookie.
My kiddos love these bars and are just as happy eating these (if there are sprinkles on them) as the cutouts. Win win for me! My daughter’s 4th birthday is coming up this week. She is eagerly waiting for her birthday party with her friends and I will be making these Vegan Sugar Cookie Bars for her party since it will be a super busy week!

Vegan Sugar Cookie Bars are super simple to prepare and only requires one bowl for mixing. First, blend the softened butter, both sugars, salt, cream of tartar and baking powder until smooth and creamy. Add vanilla, almond extract and milk, blend well. Stir in flour. Once combined well place dough into prepared baking pan and evenly press dough into pan. Bake for 15 minutes, let it cool completely and then add the frosting.

Ingredients
Cookie Bars
- 1/2 cup vegan butter
- 3 tbsp plant-based milk
- 3/4 cup sugar
- 1/4 cup brown sugar packed
- 1 tsp pure vanilla extract
- 1/4 tsp almond extract
- 1/2 tsp baking powder
- 1/2 tsp cream of tartar
- 1/2 tsp salt
- 2 1/3 all purpose flour
Frostig
- 1/2 cup vegan butter
- 1/4 cup plant-based milk
- 1/2 tsp pure vanilla extract
- dash of salt
- 3 cups powedered sugar
Instructions

Preheat oven to 375F and lightly grease a 9x13 baking pan.

In a mixing bowl, using a hand mixer, beat butter for a few seconds until smooth.

Add white sugar, brown sugar, salt, cream of tartar and baking powder. Beat until well combined.

Beat in milk, almond extract and vanilla until combined.

Beat in as much flour as you can using the hand mixer then stir in the rest until dough is formed.

Dump dough into prepared pan and spread out evenly using your fingers or a spatula. Bake for 15 minutes until the edges are light brown.

Cool the bars completely, add frosting and then your favorite topping!

In a mixing bowl combine vegan butter, milk, vanilla, salt and powdered sugar. using a hand mixer, beat ingredients until smooth. Frost cookie bar once they are completely cooled.

*you may want to add more milk if frosting is too thick to spread.

These look delicious! I will have to make them. Beats me using the cookie cutters. Plus, I like that I can make them all look different not only for Christmas but for other holidays.
