Gluten-Free Vegan Brownies
Full of chocolatey goodness, with a scrumptious flaky top, these Gluten-Free Vegan Brownies are so delicious it is hard to eat only one!
I love brownies and I especially love brownies when they are easy to make using only one bowl. Gluten-Free Vegan Brownies not only quick to whip up, you also get to eat the brownie batter while preparing it! Yes, you read correctly, you can enjoy eating the vegan brownie batter while making these delicious brownies, since they are free of raw eggs, so go ahead and indulge! When my kiddos ask for a bite of the batter I just love when I can give them a spoon full.
What are in Gluten-Free Vegan Brownies?
- 1 cup gluten-free oat flour (gluten-free rolled oats blended to create oat flour)
- 1 cup Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
- 1 cup sugar
- 1 cup brown sugar
- ¾ cup cocoa powder
- 1 tsp baking powder
- 1 tsp sea salt
- 1 tsp pure vanilla extract
- ½ cup plant-based milk
- 2 flax eggs
- ½ cup almond butter
- ½ cup vegan butter or coconut oil
- 1 cup chocolate chips
How do I make Gluten-Free Vegan Brownies?
*To ensure Gluten-Free Vegan brownies are gluten-free be sure to purchase oat flour or rolled oats with the certified gluten-free label on the package.
- Prepare flax eggs and set aside. Preheat oven to 350 °F, grease a baking pan and set aside.
- Using a hand mixer, in a large bowl, combine almond butter, vegan butter and both sugars. Then blend in cocoa powder. Add pure vanilla extract, milk and flax eggs and mix with hand mixer until completely combined.
- Mix in baking powder and salt, blend well and then beat in as much flour as you can using a hand mixer. With a wooden spoon or spatula mix brownie batter well and fold in dairy-free chocolate chips.
- Place in the oven and BAKE!
Vegan Brownies
- Contain NO animal products.
- Instead of using eggs, I used 2 flax eggs. One flax egg is, 1 TBSP of ground flax seed plus 3 TBSP of water whisked together and left to sit for 5 minutes. When I am preparing two flax eggs together I like to let them sit for 15 minutes to ensure egg like texture.
- Earth Balance butter, instead of dairy butter, which is a butter made up of oils instead of cream.
- Plant-based milk. I use almond milk.
Does cocoa powder contain gluten?
There is no gluten in cocoa powder unless it is added. Pure cocoa powder is gluten-free and safe for those with gluten allergies or for those with celiac.

Gluten-Free Vegan Brownies are fudgy, yet cakey and delicious. Full of chocolatey goodness and a flaky top it is hard to only eat one!
Ingredients
- 1 cup Bob's Red Mill Gluten Free 1 to 1 Baking Flour
- 1 cup gluten-free oat flour*
- 1 cup sugar
- 1 cup light brown sugar
- 3/4 cup cocoa powder
- 1 tsp baking powder
- 1 tsp sea salt
- 1 tsp pure vanilla extract
- 1/2 cup plant-based milk
- 2 flax eggs*
- 1/2 cup unsalted almond butter
- 1/2 cup vegan butter*
- 1 cup dairy-free chocolate chips
Instructions

Prepare flax eggs and set aside (2 TBSP of ground flaxseed plus 6 TBSP of water whisked together and left to sit for 15 minutes).

Preheat oven to 350 °F, grease a 9 x 13 baking pan and set aside.

Using a hand mixer, in a large bowl, combine almond butter, vegan butter and both sugars. Then blend in cocoa powder. Then add pure vanilla extract, milk and flax eggs and mix with hand mixer until completely combined.

Add baking powder and salt, mix well and then beat in as much flour as you can using a hand mixer. Then with a wooden spoon or spatula mix brownie batter well and fold in dairy-free chocolate chips.

Bake for 25-30 minutes. Use a toothpick and place into the center of the brownies, if it comes out without raw batter on it they are finished baking.
Recipe Notes
*using a food processor or a high-speed blender blend gluten-free rolled oats to make oat flour.
*Flax eggs: 2 TBSP of ground flaxseed plus 6 TBSP of water whisked together and left to sit for 15 minutes.
*I use Earth Balance but you may sub for melted coconut oil.
