Guacamole with Dried Cranberries (vegan, dairy-free, gluten-free)

Who loves guacamole!? I do! But let me take a moment and be honest, the first time I even tried guacamole or avocado was 13 years ago! I was just out of college and decided to give it a try because I wanted to know why most people I was around loved it. My mom and grandmother made guacamole frequently and I always turned it down. It looked strange to me and I wondered why my older brother would drool over the stuff. Until the day I tried it I never understood what the fuss was all about, but then I fell in love with guacamole and avocados and I have never looked back.
My husband and I were on a date when we had Guacamole with Dried Cranberries in it. Reluctantly I tried it and discovered it was delicious, the perfect addition to your typical guacamole recipe. The next weekend, Justin made it for a party and everyone swooned over Guacamole with Dried Cranberries. It became our new favorite.
Guacamole with Dried Cranberries

Guacamole with Dried Cranberries tastes even better when it has little chunks of avocado in my opinion. When making guacamole, we always make a large batch. I use 3 avocados, leaving half or more aside cut into small chunks which are added after the other half of the avocados are thoroughly mashed. Then, I add the salt and lime juice and mix well. Next, I add the finely diced jalapenos, red onion and whole dried cranberries and mix well. Finally, I add the tomatoes and cilantro (I’m not a huge cilantro fan but the husband loves it and it does add to the flavor of the Guacamole). I like to add those last so the tomatoes don’t get mushy.

Guacamole with Dried Cranberries

Ingredients
- 3 ripe avocados
- 1 freshly squeezed juice from a lime
- 1/2 tsp sea salt
- 1/4 cup diced red onion
- 1/2 of a fresh diced jalapeno
- 1/4 cup dried cranberries
- 1 diced vine ripened tomato
- 1/4 cup cilantro finely chopped
Instructions

In a medium sized bowl mash the avocado. I like to leave part of the avocado in chunks.

Add in juice from the lime and salt and mix well.

Add red onion, jalapenos, and dried cranberries and mix well.

Then fold in tomatoes and cilantro. Enjoy!

There is seriously nothing better than a big bowl of guacamole (with a side of chips!). I’ve made guac with cherries before, so I’m sure I would love this version, too!!
