No Bake Chocolate Coconut Almond Bars (V, DF, GF, PF)
These DELICIOUS gluten-free and dairy-free No Bake Chocolate Coconut Almond Bars are the perfect dessert, made with Chocolate, Coconut and Almonds!
I love chocolate and I know many of you can relate. I’m able to eat chocolate anytime of the day and I am always able to find an excuse to eat it. Yep, that’s me! I love baking with it. Being that I am somewhat addicted to chocolate, I have tendencies to make most of my desserts (and breakfast!!!) with chocolate. There are occasions where some of the recipes I make don’t involve chocolate and when that happens my friends and family are amazed.
When telling my friend about a recipe she usually asks, “Is there chocolate involved?” She also told me to name my blog, SURVIVING ON CHOCOLATE (that would have been perfect but, my name was already picked), so now you know how much I love CHOCOLATE and of course this recipe includes it! It also includes many of my other favorites, which are: almond butter, coconut, and dates. Put these four ingredients together (with, almonds, pure vanilla extract and a dash of salt) you get heavenly NO BAKE ALMOND BUTTER CHOCOLATE COCONUT BARS! These bars a delicious and did not last but two days in my house (yes I am one of the culprits!).

These no bake bars take about 15 minutes to prepare. First, put the almonds in the food processor until they are chopped. Then, add the rest of the ingredients. Mix until you get a dough like mixture. And let me just say the dough mixture is super yummy too. It is so good to eat, even without the Chocolate! Yes the chocolate lover said, “It’s good without chocolate.” Place the dough like mixture (what is left of it after eating multiple bites of it) in a lined baking pan, pour the chocolate topping on top, sprinkle with almonds and then they are ready to sit in the freezer 20 minutes. Just enough to harden the chocolate. Perfect for any occasion! Hope you enjoy these no bake bars as much as I do!
No Bake Chocolate Coconut Almond Bars (Vegan, Dairy Free, Gluten Free, Peanut Free)
- 10-12 Medjool Dates, pitted
- 1/2 cup unsweetened almond butter
- 1 cup unsalted almonds
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1/3 cup unsweetened coconut flakes
Chocolate and Almond Topping
- 3/4 cup + 1 tbsp vegan chocolate chips
- 1/4 cup unsweetened almond butter
- 1/4 cup chopped almonds
For Bottom Layer
Line an 8-square baking pan with parchment paper. Set aside.
Add almonds to food processor and blend until almonds are chopped. Scoop out a 1/4 cup and set aside for the topping.
Add dates, almond butter, vanilla, coconut flakes and salt to the food processor. Blend until you get a dough mixture, scarping sides as needed.
Once you get a dough like mixture pour into the prepared baking pan. Press down and smooth until it is even in the pan.
Chocolate and Almond Topping
Using the double broiler method add almond butter and chocolate chips. Stir until completely melted. Pour chocolate over coconut almond mixture. Smooth out chocolate using a spatula.
Sprinkle 1/4 cup of almonds on top of the chocolate. Freeze for 20 minutes.
