No Bake Snickerdoodle Energy Bites
Each time these energy bites are made in my house they go fast! Since these bites are no bake, they are not only quick to throw together they are ready within minutes. Put everything in the food processor blend, roll into balls and then you have a delicious snack ready to curve your sweet tooth and keep you full until your next meal.
How to Make Snickerdoodle Energy Bites
Let’s dive in and see how simple they are to prepare. First, wash dates and remove seeds then set aside. Mix together the cinnamon and sugar (if you choose to roll the bites in it). Then, using a food processor add the cashews, coconut, cinnamon, salt and cream of sugar and mix until the cashews and coconut are finely ground.
Then, add the dates, almond butter and vanilla. Mix well until ingredients form a dough like mixture. My food processor usually takes about two minutes. Sometimes the mixture looks crumbly but once you start rolling the mixture will form into nice bites.
If you are indulging, roll each Snickerdoodle Energy Bites into the cinnamon and sugar mixture. If you choose not to roll into cinnamon and sugar mixture, don’t worry, they are still just as delicious.

Ingredients
- 1 1/4 cup Organic Cashews
- 1/2 cup Unsweetened Coconut Flakes
- 3/4 tsp Cinnamon
- Dash of Sea Salt
- Dash of Cream of Tartar
- 1 cup Medjool Dates, pitted and washed (13-15 dates)
- 1/2 cup Unsweetened Almond Butter (any nut butter will do)
- 1/2 tsp Pure vanilla extract
OPTIONAL
- 1/4 cup Sugar
- 1 tsp Cinnamon
Instructions

Wash dates and remove seed. Set aside. If rolling the energy bites in Cinnamon and Sugar, combine Cinnamon and Sugar and set aside.

Using a food processor add Cashews, Coconut, Cinnamon, Salt and Cream of Tartar. Mix well until cashews are finely ground.

Add Dates, Almond Butter and Vanilla. Mix until ingredients form a dough like mixture.

Using a heaping tablespoon of dough and roll into balls. This recipe makes 18 Bites or more depending how big you make the bites.

If desired, roll energy bites into Cinnamon and Sugar.*
