Vegan Cinnamon Roll Baked Oatmeal

Who doesn’t love a warm gooey frosting topped cinnamon roll? Cinnamon Rolls are my weakness, but I know it is not the healthiest item to have for breakfast on a weekly. I plan for a cinnamon roll a few times a year so in between those times I enjoy Vegan Cinnamon Roll Baked Oatmeal. It is a delicious breakfast to satisfy my craving for a cinnamon roll and I can enjoy as often as I want without the guilt.
Vegan Cinnamon Roll Baked Oatmeal
This baked oatmeal is packed with fiber, protein and is gluten-free. It is delicious with or without the buttercream glaze and is a breakfast your whole family will enjoy. My kiddos love when they can have this for breakfast. So, go ahead fill your house with the aroma of a freshly baked cinnamon roll and bake Vegan Cinnamon Roll Baked Oatmeal. It is super simple to mix up.
- First, mix all the dry ingredients in a bowl.
- In a separate bowl combine all the wet ingredients and mix well.
- Combine the wet and dry ingredients and pour mixture into greased baking dish. Then bake.
- If adding the buttercream deliciousness, prepare and mix well and spread over the mixture once it is finished baking.
Enjoy baked oatmeal immediately with a splash of your favorite milk or store in the refrigerator for up to a week. After cooling in the refrigerator, the oatmeal with firm up, be sure to reheat!

Vegan Cinnamon Baked Oatmeal
Ingredients
DRY INGREDIENTS
- 3 cups gluten-free rolled oats
- 1/4 cup chopped pecans *optional
- 2 tbsp ground flax seed
- 1/2 tsp sea salt
- 1 tsp baking powder
- 1 1/2 tsp cinnamon
WET INGREDIENTS
- 1/2 cup plant-based milk (milk of choice)
- 1/3 cup maple syrup
- 1/2 cup unsweetened applesauce
- 1/3 cup unsalted almond butter
- 1 tsp pure vanilla extract
TOPPING (optional)
- 2 tsp vegan butter
- 1 tbsp plant-based milk
- 1/2 cup powered sugar
Instructions

Preheat oven to 350°F. Butter a 2-2 1/2 quart baking dish (whichever size you have available).

In a bowl combine dry ingredients and mix well.

In a separate bowl, combine wet ingredients and whisk well.

Pour the wet ingredients into the bowl with the dry ingredients. Mix well.

Pour mixture into prepared baking dish.

Bake uncovered for 25-30.

While oatmeal is baking prepare buttercream glaze.

In a small bowl combine all the TOPPING INGREDIENTS mix well and pour over baked oatmeal after it has baked.

Scoop baked oatmeal in a bowl and enjoy with a splash of your favorite milk!

Store in the refrigerator for up to a week. Be sure to warm!

Could steel cut oats be used?
Hi I haven’t used steel cut oats with baked oatmeal. The texture would be different and more liquid would be necessary. If you try it let me know how it turns out! 🙂
Just made this and it is DELICIOUS! Can’t tell it’s vegan, it tastes like a treat! A keeper for sure! I made it with peanut butter instead of almond and doubled the recommended amount of pecans!
