Vegan Double Chocolate Peppermint Cookies
Rich with delicious chocolate these Vegan Double Chocolate Peppermint Cookies are infused with just the right amount of peppermint and are topped with jolly crushed candy canes. Perfect for this Holiday Season!
Being the Holiday Season, it is a wonderful time to bake cookies with peppermint. However, I enjoy them all year long without the cute peppermint sprinkles. Peppermint is another flavor I can’t live without! I love the flavor in cookies, cupcakes and coffee. My love for the flavor isn’t fair weather, it is all year long no matter what the season! So, combining chocolate and peppermint is the best thing. It brightens my day and puts a huge smile on my face.
I took my neighbors some of these delicious cookies (because in my mind who doesn’t love this traditional flavor) and her words were “I’m not a peppermint fan and I won’t eat them, but my husband will.” I was a bit in shocked, my eyes grew big and of course I told her she was weird (she isn’t I adore her, SERIOUSLY! ) and handed the cookies over to someone grateful for the delicious combination of peppermint and chocolate. These delicious Vegan Double Chocolate Peppermint Cookies are simple to whip up and only requires one bowl!!
Simple Steps:
- Preheat oven to 375°F. Line two baking sheets with parchment paper.
- In a large bowl, with a hand mixer, beat butter and coconut oil until creamy. Stir in sugars, almond milk (or milk of your choice) and peppermint extract.
- Then add baking soda, baking powder, cocoa and mix well.
- Beat in as much flour as you can and then stir in the rest.
- Fold in chocolate chips.
- Drop heaping tablespoons of dough onto baking sheet or baking stone press dough gently with fingers.
- Bake for 13-15 minutes. As soon as you remove the Vegan Double Chocolate Peppermint Cookies from the oven sprinkle the crushed peppermint candy on the top.
- Using a spatula, carefully transfer cookies to a cooling rack.

Ingredients
- 3/4 cup vegan butter
- 1/2 cup refined organic coconut oil melted
- 1 cup brown sugar
- 1/2 cups sugar
- 1/2 tsp peppermint extract
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup cocoa
- 2 cups flour
- 2 cups semi-sweet vegan chocolate chips
Instructions

Preheat oven to 375F and line two baking sheets with parchment paper (feel free to use a baking stone).

With a hand mixer, combine melted coconut oil, vegan butter, brown sugar and granulated sugar. Blend until smooth.

Add in peppermint extract, baking soda, baking powder, salt and cocoa. Mix well until smooth.

Slowly add flour until thoroughly blended. Fold in chocolate chips with a spatula.

Drop heaping tablespoons of dough onto baking sheet or baking stone.

Bake for 13-15 minutes. As soon as you remove the Vegan Double Chocolate Peppermint Cookies from the oven sprinkle the crushed peppermint candy on top.

I tried these and they are really yummy. If you don’t care for peppermint you can always take it off the top. The chocolate cookie is soft and moist. These were a big hit for my family.

I’m actually not fond of peppermint except that smell! But I don’t like mints either. My husband loves it though so may make him these cookies.
I think the crushed peppermint on top of the cookies is perfect – seems like just a great mix of flavors. Yum!

Thank you! I had decided to use 1 cup of semi-sweet chips, because I hadn’t seen your answer.
I also discovered that at an altitude of 5,000 ft., I needed to cut the temperature to 325 degrees and only about 10-11 minutes. My first batch into the oven had burned on the bottom, even though they were a bit higher than the middle of the oven, and were in for 13 minutes. 😳.
