Vegan Puppy Chow
Vegan Puppy Chow is a delicious spin off the classic Rice Chex Muddy Buddies (dairy-free, peanut-free).
I will never forget the first time I had Puppy Chow. My grandma had made it for a party we were having and within the first bite I was hooked. From that day on I would buy a box of Rice Chex, make puppy chow and take it to any special occasion that was going on.
Until one Halloween my friend brought over dairy-free puppy chow (it was just dairy-free, not PEANUT free). My husband gave one to my son and he instantly had a reaction. Within seconds he had a severe reaction, I will spare you the details. We panicked loaded him in the car and we were off to the ER. He was admitted immediately and was given some sort of injection and within in minutes he was laughing and back to his normal self. On that Halloween night we found out he was also allergic to peanuts. Ugh…now it was not only dairy but peanuts too.
After this incident I had to eliminate peanut butter from our house completely and that is when almond butter became our new best friend. Since my kiddos did not eat meat, they needed to get fat and protein from other sources and almond butter was/is a big fat and protein source. I make tons of breakfasts and desserts with almond butter and on occasion I melt chocolate and almond butter together to coat pretzels or to top No Bake Chocolate Coconut Almond Bars. Since melted chocolate and almond butter is fudge like I decided to use it for Vegan Puppy Chow. Now it is one of our favorite treats and it is super easy to throw together for a yummy snack or dessert.
