Vegan Spanish Rice (Gluten-Free)
Vegan Spanish Rice – This Spanish Rice is an old family recipe that just happens to be vegan. It is delicious and is a perfect addition to any Mexican Food dish.
My mom’s family is of Mexican decent, so I grew up eating some of the best Mexican food. So, here I go with another dish I grew up eating and enjoying. Vegan Spanish Rice! It is so delicious. I do occasionally make it using brown rice but it is so delicious when made with white rice. Spanish Rice is another one of my mom’s specialties. Her Spanish Rice is hands down the best in town.
When I make the rice, I go off memory because I have helped my mom prepare it so many times. I remember standing at the stove stirring the rice until it was a perfect golden brown color.
Let me walk you through the process. Add vegetable oil and rice to a pan and brown it until it is golden brown, then add the white onion and continue to stir it until the onion is clear. After the onion is clear, add the liquids along with the salt and pepper. Turn the burner to low and let the rice simmer for about 25 minutes. Fluff with a fork and enjoy.
The most difficult part in making the Vegan Spanish Rice is making sure you brown it until it is golden brown without burning it. You must watch and stir the rice continuously until the perfect golden brown color is achieved, then quickly move on to the next step. This browning process gives it a lot of flavor.
Ingredients for SPANISH RICE
- White Rice (short or long grain)
- Vegetable Oil
- White Onion
- Tomato Sauce
- Canned Tomatoes
- Salt
- Pepper
- Water
- Garlic Clove or Garlic Powder

Spanish Rice (vegan)
Ingredients
- 1 tbsp vegetable oil
- 1 1/2 cups white rice long or short grain
- 1/2 cup chopped white onion
- 2 cups warmed water
- 14.5 oz canned tomatoes
- 1 cup tomato sauce 8 oz.
- 1 tsp salt
- 1/2 tsp garlic powder*
- pepper to taste
Instructions

In a large pot, add oil and rice. Put stove on medium to high heat and stir rice until it turns golden brown.

Once rice is golden brown (be sure not to burn*) add the onion and stir until onion is clear.

Add water, tomatoes, tomato sauce, salt, garlic powder and pepper. Mix well. Cover with lid, turn burner to low and simmer for 25 minutes until rice is soft. Once finished fluff with and fork and enjoy.
Recipe Notes
*you can mince a garlic clove or cook rice with a whole garlic clove and remove once fully cooked.
*I heat my water before adding.
*Once rice is golden brown it will start to darken quickly so continue to stir.
