Lentil Tacos
Lentil Tacos are healthy, hearty and loaded with flavor without the stress! The filling is cooked in the CrockPot and is ready for dinner on those busy nights.
Taco Tuesday is not a thing in my house because well I love tacos and why wait for a particular day to eat them. Tacos are a staple in my house, we eat them for breakfast, lunch and dinner (we don’t wait for Taco Tuesday)! Who doesn’t love a delicious taco? I do, and my new favorite are these Vegan Lentil Tacos. Lentil Tacos are especially delicious when topped with my Grandma’s Signature Salsa | Made with Anaheim Chili Peppers or Roasted Tomatillo Salsa. Make it a feast and make a side of Spanish Rice.
I remember as a child being so relieved when I found out we were having tacos for dinner! My mom would fry corn tortillas to make taco shells then she would fill the tacos with ground beef, potatoes and topped with lettuce and sharp cheddar cheese. They were seriously to do die for! Oh, I can’t forget the homemade taco sauce she would make, I still make it to this day and I will post her recipe sometime soon.
Since we have restricted dietary needs in my family I love trying new fillings for tacos. My husband loves when I cook with lentils, so I had to make a taco filling with his lentils that would be delicious. In comes, Vegan Lentil Tacos!!! They are super easy to prepare. I throw everything in the CrockPot before starting my day and the Vegan Lentil Taco filling is ready in time for dinner. The Vegan Lentil Taco filling can be used for making burritos, taquitos and nachos. It is also delicious topped on nachos with Guacamole with Dried Cranberries.
Vegan Lentil Taco Filling
Ingredients
- Red and Green Lentils
- Vegetable Broth
- H20
- Canned Tomatoes
- Canned Roasted Green Chili
- Yellow Onion
- Chili Powder
- Cumin
- Oregano
- Garlic Powder
- Paprika
- Salt

Lentil Tacos
Lentil Tacos are healthy, hearty and loaded with flavor without the stress! They are cooked in the CrockPot and are perfect for dinner on those busy nights.
Ingredients
- 3 cups lentils I use red and green
- 4 cups (32 0z) vegetable broth
- 2 cups water
- 1 can (14.5 0z) diced tomtatoes with liquid
- 1 can roasted green chili
- 1 yellow onion, finely chopped
- 3 tsp chili powder
- 1 1/2 tsp cumin
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1 1/2 tsp sea salt
Toppings
- cilantro
- lettuce
- tomato
- salsa
- lime
Instructions

Finely chop onion. Combine all ingredients (excluding the toppings) and cook on high 3-4 hours or low 8-10 hours.*

Mix well. Serve lentil filling in taco shells or tortillas with desired toppings.

*I occasionally stir the lentil filling while it is cooking.
