Vegan Double Chocolate Peppermint Cookies

Rich with delicious chocolate these Vegan Double Chocolate Peppermint Cookies are infused with just the right amount of peppermint and are topped with jolly crushed candy canes. Perfect for this Holiday Season!

Ingredients

  • 3/4 cup vegan butter
  • 1/2 cup refined organic coconut oil melted
  • 1 cup brown sugar
  • 1/2 cups sugar
  • 1/2 tsp peppermint extract
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cocoa
  • 2 cups flour
  • 2 cups semi-sweet vegan chocolate chips

Instructions

  1. Preheat oven to 375F and line two baking sheets with parchment paper (feel free to use a baking stone).

  2. With a hand mixer, combine melted coconut oil, vegan butter, brown sugar and granulated sugar. Blend until smooth.

  3. Add in peppermint extract, baking soda, baking powder, salt and cocoa. Mix well until smooth.

  4. Slowly add flour until thoroughly blended. Fold in chocolate chips with a spatula.

  5. Drop heaping tablespoons of dough onto baking sheet or baking stone.

  6. Bake for 13-15 minutes. As soon as you remove the Vegan Double Chocolate Peppermint Cookies from the oven sprinkle the crushed peppermint candy on top.

  7. Using a spatula, carefully transfer cookies to a cooling rack (after sprinkling the crushed candy cane on top).
