Chocolate Chip Banana Bread Baked Oatmeal

Healthy and delicious, banana bread baked oatmeal cups with chocolate chips.  Made vegan, gluten-free and peanut-free.

  • 3 very ripe bananas (mashed) medium-sized
  • 3 tbsp plant-based milk I use almond milk
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking powder aluminum free
  • 3 cups gluten free rolled oats
  • 1/3 cup vegan chocolate chips


  1. Preheat oven to 350°.  Line a muffin pan with liners.

  2. In a large bowl, combine mashed bananas, plant-based milk, pure maple syrup and vanilla. Mix thoroughly.

  3. Add salt and baking powder. Mix well. Stir in oats and chocolate chips, mix until combined.

  4. Divide mixture evenly into muffin cups.  Bake for 16-18 minutes
