Homemade Roasted Tomatillo Salsa

This Homemade Roasted Tomatillo Salsa is a delicious salsa overflowing with flavor, making it hard to put the chips down. Perfect for dipping or atop of any Mexican Food Dish.

  • 3 lbs tomatillos*
  • 1 large white onion cut into rings
  • 1-2 jalapenos
  • 2-3 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp salt adjust accordingly to your taste
  • pepper
  • 1/4 cup finely chopped cilantro OPTIONAL


  1. Turn oven to broil.

  2. Peel the husk off of the tomatillos and wash.

  3. Slice onion into rings.

  4. Combine tomatillos, sliced onions, jalapeno(s), garlic cloves, olive oil, salt and pepper in a large mix well.  Mix until coated with olive oil and the salt and pepper.

  5. Place mixture on a foiled baking sheet and place into oven.

  6. Keep a close eye on the veggies.  When they start to brown pull them out and rotate the tomatillos and jalapeno(s). Flip the sliced onion. 

  7. Continue this process until all sides of the tomatillos and jalapeno(s) are soft and slightly charred.

  8. Once finished, peel the skin off of the jalapeno(s) and remove the seeds and stem.  Then add all ingredients and the juice from the tomatillos to a food process and pulse until you reach your desired consistency. 

  9. Poor into a bowl and if desired, add the cilantro.  Mix well with a spoon.

  10. Get your favorite chips out and indulge!!!

*I always make a large batch of this salsa because we use it for lots of different dishes and for parties.  It doesn't last long.
